Abstract

Maqolada rangli kukunsimon ziravorlar (qizil qalampir, paprika, zarchava, kori) assortimentida sintetik bo‘yoqlar bilan qalbakilashtirishni aniqlashning kompleks mezonlari tizimi 02.00.09 — “Tovarlar kimyosi” ixtisosligi nuqtayi nazaridan asoslangan. Mavjud tadqiqotlarda yuqori sezuvchanlikdagi xromatografik va spektroskopik usullar ishlab chiqilgan bo‘lsa-da, ular tovarshunoslik ekspertizasining organoleptik, fizik- kimyoviy va markirovka ko‘rsatkichlari bilan yagona baholash tizimiga birlashtirilmagan. Taklif etilayotgan yondashuvda qalbakilashtirish organoleptik (O), fizik-kimyoviy (F), spektrofotometrik (S), xromatografik (X) va tovarshunoslik (T) mezonlar guruhlarining og‘irlik koeffitsiyentlari bilan normallashtirilgan yig‘indisi — kompleks qalbakilashtirish indeksi (K) orqali baholanadi. Ball berish shkalasi, normalizatsiya, og‘irlik koeffitsiyentlarini AHP va entropiya usullari kombinatsiyasi asosida tanlash metodikasi, chegaraviy qiymatlar va interpretatsiya qoidalari asoslangan, UV-Vis, TLC, HPLC-DAD va LC-MS/MS usullarini birlashtiruvchi to‘rt bosqichli diagnostika algoritmi taklif etilgan. Keltirilgan raqamli natijalar metodikaning ishlash tartibini ko‘rsatuvchi model ma’lumotlardir.
